When I visited Madrid a few years ago, I fell in love with their tapas and one of my favorites was patatas bravas – a delicious potato and sauce dish. It’s hearty and filling and super yummy, so how do you make it? It’s actually really easy and this recipe will show you how. Let’s learn an easy Spanish recipe!
This recipe is really easy and convenient and relies on ingredients you’ll probably always have on hand. The measurements provided are rough estimates because I almost always vary the amount of each ingredient I put it. Keep testing and trying out different measurements until you find the ones you like best – this is just a rough baseline!
Easy Spanish Recipe Ingredients (for two people)
- 4 medium potatoes
- quarter cup of olive oil (or about 5 table spoons)
- 2 teaspoon hot sauce
- 2 teaspoons sweet paprika
- 2 tablespoons of garlic mayonnaise (or plain mayonnaise)
- 1 tablespoon of lemon juice
- 1 tablespoon of honey
- 1 teaspoon oregano
- 1/8 teaspoon salt
Easy Spanish Recipe Preparations
First you have to prepare the potatoes. It’s super simple: just cut your potatoes into cubes and then have them sit in cold water fora few minutes to get the starch out. While you’re doing this, go ahead and preheat your oven to 450 degrees Fahrenheit or 230 degrees Celsius. Then, rinse out the water and pour new cold water in and boil it. This will probably take about 15 minutes. You want your potatoes to be tender but not too soft and mush. If anything, it’s okay if they’re a little hard because they’ll be baked anyway.
Now, pour your tender potato cubes onto a baking sheet (make sure you have wax paper underneath) and drizzle olive oil on top. Being generous with the oil is great because it’ll make the potatoes even more crispy. But the amount of oil is up to you. Just make sure there’s enough oil to coat all the potatoes.
Once you’ve drizzled olive oil onto the potatoes, just pop it into the oven for 20-40 minutes. Pro tip: put a timer on for 20 minutes and if after then you don’t think the potatoes are ready, just check up on them every 5 minutes. You want your potatoes to be brown and crispy – in my experience, it takes about 30 minutes for the potatoes to reach that point.
Making the sauce is the most fun part. Your sauce is unique to you – add or subtract whatever you want to it, depending on your taste. I’ve seen many sauce recipes for patatas bravas where there’s strict measurements and you have to follow a certain regime but I don’t like that. Sauces are so fun and the perfect way to experiment with ingredients, so take these steps with a grain of salt (literally haha!).
Start off with two tablespoons of garlic mayonnaise (or regular mayonnaise). Add the tablespoon of lemon juice and honey to this and mix it. Add 1/8 of a teaspoon of salt, a teaspoon of oregano (if you have za’atar it would go really well with this sauce!), two teaspoons of sweet paprika and two teaspoons of hot sauce. This sauce should have a little kick of spice, but nothing too strong. If you want something milder, use one teaspoon of hot sauce and little more honey.
Like I mentioned earlier, this sauce is catered to YOU. If you like sweeter sauces, then opt for more honey and mayonnaise. If you like more heat, then add more paprika and hot sauce, or even add smoked paprika.
Technically, the sauce and the potatoes are the core of the dish and you don’t need anything else. BUT, toppings are a great way to add extra flavor.
The best topping I have found thus far for patatas bravas are a simple onion and garlic fry. All you need to do is chop up one medium sized onion and a couple of cloves of garlic, fry them with a little oil, add some oregano, and wait until they brown. They will brown beautifully if you just let them simmer on low heat for a few minutes.
Now, you have prepared all your different components and all you have to do is plate! This is the easiest step. First, just pour your potatoes onto a big plate. Then, drizzle your sauce on top. Finally, add the onion and garlic fry and VOILA! an easy Spanish recipe that took barely any effort!
